- Pochamos la cebolla picada finamente a fuego medio con un chorreón de aceite de oliva y la mitad de la mantequilla, añadiendo una pizca de sal para facilitar que la cebolla suelte agua
- Añadir el vaso de arroz y tostar durante aproximadamente un minuto
- Añadir el medio vaso de vino blanco🍷 y esperar a que se reduzca
- Añadir la mitad de la calabaza que ya habíamos preparado y un cazo de caldo de verduras CALIENTE y sal y pimienta al gusto.
- Continuar añadiendo caldo de verduras y removiendo a medida que este se vaya viendo absorvido por el arroz, es importante hacerlo a fuego medio-bajo para que no se evapore el caldo demasiado rápido. Continuar durante aproximadamente 20 minutos hasta que el arroz se haya inflado y este hecho (a mi me gusta al dente pero es cuestión de gustos). Ir probrando para comprobarlo y rectificar sal y pimienta
- Añadir los otros 15 gramos de mantequilla y el queso parmesano, remover y servir añadiendo la otra parte de la calabaza que habíamos reservado. Yo añadí unas hojas de salvia para decorar, pero también se puede hacer con perejil picado, se puede añadir además un poco de parmesano rallado por encima a la hora de servirlo.
