- 400 grs Azúcar
- 1/2 limón
- 1/2 naranja
- 15 grs Jengibre fresco

- Rallar las pieles de los cítricos y reverlas.
- Lavar las berenjenas, cortar la parte de arriba y pelarlas dejando parte de la piel. Cortarlas en trozoz medianos y meterlas en un bol.
- Exprimir el limón y verter el jugo sobre las berenjenas Y mezclar bien. Añadir el azúcar, mezclar bien y volcar todo en la olla.
- Añadir la ralladura de los cítricos reservadas y cocinar por 10 minutos a fuego medio removiendo de vez en cuando.
- Mientras exprimir la naranja y rallar el jengibre. Añadirlos a la berenjenas y cocinar a fuego bajo durante aproximadamente 15 minutos, removiendo de a ratos.
- Volcar la mermelada de berenjenas aún caliente en francos previamente hervidos, esterilizados, cerrarlos y ponerlos boca abajo hasta que queden fríos.
- Para pasteurizar los frascos envolverlos en trapos de cocina y hervirlos durante 20 minutos.
