- La carne molida la salpimentamos echamos 1 huevo crudo, un poquito de leche y las 2 cucharadas de pan rallado con el diente de ajo picadito y la zanahoria en cuadraditos y los piñones y mezclamos todo bien.

- En una sartén con aceite de oliva caliente sofreímos la 3 cucharadas soperas aproximadamente de cebolla picadita. Cuando esté pochada agregamos la mezcla anterior y dejamos que se cocine bien con la pastilla de Knorr suiza (opcional pero dará más sabor). Agregamos la berenjena previamente sofrita a la mezcla hasta que todo esté bien hecho.
- En una sartén echamos un poquito de aceite de oliva con 3 cucharadas de cebolla picadita. Cuando esté pochada agregamos los tomates previamente triturados. Agregamos sal al gusto y dejamos que se cocine la salsa de tomate. Cuando se haya cocinado y el fuego ya apagado echamos 1 cucharadas de café de azúcar para eliminar la acidez.
- Mezclamos la mezcla de la carne molida ya cocinada con tomate al gusto y rellenamos la berejenta. Ponemos una cucharada adicional de tomate por encima y si queremos podemos poner queso por encima y gratinar.


- También se puede hacer con calabacitas como en la foto. Yo he espolvoreado un poco de parmesano, pero se podría poner manchego y gratinar.
