- 400 grs jamón

- Por otro lado, ponemos los puerros cortados en un bol con agua y un generoso chorro de vinagre. Revolvemos un poco y dejamos reposar por un rato (10 a 15 minutos es suficiente). Pasado el tiempo vamos sacando los puerros tratando de no mover mucho el agua. El vinagre ayudará a sacar toda la tierra que haya quedado entre las hojas en el primer lavado. Enjuagamos bien bajo la canilla y listo para usar.




- Para el armado, tomamos una fuente de horno y colocamos un poco de aceite (si no es antiadherente pongan bastante, y pueden espolvorear con pan rallado o avena). Vamos poniendo por capas: berenjenas, puerros, tomate, jamón, queso y repetimos hasta el final. Yo dejo sin poner la última capa de jamón y queso y la agrego al final, cuando todo lo demás está cocido, para que no se quemen.






- Llevar al horno, aproximadamente 200°, por 1 hora. Agregar la última capa de jamón y queso y dejar fundir. Recomiendo dejar reposar unos minutos antes de servir.



- Esta vez usé jamón en trozos que piqué en cubitos, pero puede usarse en fetas.
